Do you enjoy just pulling a tomato based sauce full of flavour from the freezer? Then this thermomix Passata recipe is very handy to have in the freezer to use in spaghetti bolognaise,nachos, onapizza base or in any recipe that calls for a can oftomatoes– it adds a wholenew flavour dimension to whatever you are using it in. Made extra flavoursome with the herbs and capsicum and semi-dried tomatoes your family won't be disappointed with the flavour this base puts out! I encourage you to give it a go and leave the bland watered down passatas on the shelf.
ThermoFun – Passata Recipe

Ingredients
- ½ lemon, rind + juice
- 4 garlic cloves, peeled
- 1 onion, peeled and halved
- handful fresh basil or 1 teaspoon dried
- handful fresh parsley or 1 teaspoon dried
- 300g red capsicum, quartered
- 50g sun-dried tomatoes
- 20g olive oil
- 1200g tomatoes, can or fresh, diced
- 140g ThermoFun Tomato Paste
- 100g boiling water from kettle
- 1 tablespoon mixed herbs, dried
- ½ teaspoon black pepper, ground
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
Instructions
- Place lemon rind into TM bowl and zest 10 sec / speed 9.
- Add garlic, onion, basil, parsley, capsicum, sun-dried tomatoes and oil and chop 5 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add remaining ingredients (except bay leaf) and mix 5 sec / speed 5. Scrape down.
- Add bay leaf and cook 30 mins / Varoma / speed 1 / MC off, placing simmering basket onto TM lid to prevent spatter.
- Once cooked, remove bay leaf and pour into freezer containers.
Notes
DO NOT double this recipe due to overflowing the Thermomix bowl.
This makes approximately 1200g. I usually use 600g in most recipes and freeze the other 600g.
If a thinner sauce is required leave MC in Thermomix lid while cooking.

Sabina personally I wouldn't. I always freeze mine in plastic containers - either halved or quartered.

I made this tonight and once again Leonie your recipe was so good! The whole family love it. Once the passata had cooked I added it to my browned meatball and cooked them in the sauce and served it on spaghetti. My hubby actually licked his plate clean, much to the delight of my children who then followed suit. I felt pretty chuffed with myself as I remembered to steam some veggies in my varoma as I cooked the passata sauce. Thank you for a great recipe.

I love this recipe. I try to have a batch always in the freezer for emergency 'what's for dinner' nights.
A couple of tips if you use tinned tomatoes - leave out the water, and don't be afraid to cook for longer. Todays batch I cooked for 60 minutes. Next time I'm going to just use the whole tomatoes out of the can and keep the liquid for something else.
I also halve the lemon zest. Just a personal taste preference.

Such a lovely sauce that can easily be adapted for dietary requirements! I swapped the onion and garlic for zucchini, carrot and garlic & onion infused oils (To make it low FODMAP). I used fresh tomatoes and fresh zucchini from my garden that needed using up thanks to the summer heat ripening them so quickly! Thanks for a lovely, tasty basic passata recipe :)

I can't believe it has taken me THIS long to make your Passata Leonie! I really enjoyed the taste of this recipe! I drained well the sun dried tomatoes I had on hand in a jar and used xylitol for the sugar based on my food lifestyle!

Wow!! My 3yo who never eats anything absolutely loved this- as did the rest of the family! I cooked it up with some bacon, onion, garlic, carrot, lamb mince and olives and it was awesome. Thank you Leonie for adding to the few meals my kids will actually enjoy!

This is a great basic pasta sauce that can easily but used as is, but also be dressed up further. Really tasty!!

Made this and it's delicious. I used a mixture of fresh tomato that needed using up/was starting to go a bit soggy and cans. divided it into 3 bags,as I am only cooking for 4 at the moment, and froze. I will be making this to have on hand anytime I have leftover tomato or a bit of spare time. Well worth the effort.
