Ingredients You’ll Need

You only need three simple ingredients to make this lemon popsicle recipe!

  • Lemons: Freshly squeezed lemon juice makes all the difference in these popsicles! I like to add in some finely grated lemon zest as well. It is optional but adds incredible flavor so I highly recommend it!
  • Sweetener: Use honey or organic cane sugar.
  • Water: Use lukewarm water to help the honey or sugar quickly dissolve. You could also use coconut water.

Special Equipment

  • Large Measuring Cup: I like to mix together the popsicle mixture in this large glass measuring cup. The spout makes it really easy to pour into the popsicle mold.
  • Microplane Zester: I like to use a microplane zester grater to finely zest the lemon zest. Make sure to grate off only the yellow part of the peel (the white part is bitter).
  • Popsicle Mold: A good popsicle mold is key to avoiding the frustration of them not releasing. Here are some of my top picks for the best popsicle molds. My absolute favorite is this stainless steel popsicle mold which I have been using for many years.

  1. Whisk together ingredients: Whisk together lemon juice, lemon zest, sweetener and lukewarm water until honey or sugar is dissolved. I like to mix everything together in a large glass measuring cup to make it easy to pour the mixture into the popsicle mold afterwards.
  2. Pour into popsicle molds: Pour mixture into popsicle molds, leaving a bit of space at the top for them to expand. Note: This recipe makes 6 popsicles using this popsicle mold but quantity will vary depending on the size of the popsicle mold you use.
  3. Freeze: The popsicles usually take about 4-6 hours to freeze but this will vary depending on the freezer and size of popsicles. I usually just freeze overnight and enjoy the next day! To serve, run the popsicle mold under warm water for a few seconds until they easily release. Enjoy!

Different Flavor Variations

You can easily customize these lemonade popsicles by adding in some other fruits or herbs. Here are some ideas:

  • Strawberry Lemonade Popsicles: Blend the popsicle mixture together with a few strawberries.
  • Blueberry Lemonade Popsicles: Add some blueberries to the popsicle mixture and blend together.
  • Raspberry Lemonade Popsicles: Blend together the popsicle mixture with some raspberries.
  • Mango Lemonade Popsicles: Blend the popsicle mixture together with some mango or add some mango nectar.
  • Lemon Lime Popsicles: Substitute half of the lemon juice for fresh lime juice and use a mix of both lemon and lime zest.
  • Mint Lemonade Popsicles: Muddle some fresh mint leaves into the mixture to infuse it with minty flavor. Remove and pour into molds.

Can I use bottled lemon juice to make lemonade popsicles?

Freshly squeezed lemon juice really is the key to the best tasting popsicles. Bottled lemon juice adds a bitter, slightly artificial flavor due to processing and preservatives.

How long does it take for the popsicles to freeze?

It usually takes about 4-6 hours for the popsicles to fully freeze. However, the timing will depend on the freezer and size of popsicles. I tend to just freeze them overnight and enjoy the next day.

How long can they be stored in the freezer?

You can store them in the freezer for 1-2 months. They won’t go bad if stored longer but the texture may change and become frosty. You can store them directly in the popsicle mold or quickly unmold them, wrapping each one in plastic wrap or reusable beeswax wrap and storing in a freezer bag or airtight container.

Can I reduce the amount of sweetener?

You can but the texture of the popsicles may change. The sugar or honey helps your lemonade popsicles stay soft with a bitable texture. Therefore, I recommend staying within the range listed in the recipe.

Ingredients

  • 1/2 cup fresh lemon juice (from about 3 lemons)
  • 1/3 to 1/2 cup honey or organic cane sugar (depending on preferred sweetness level)
  • 1 1/2 cups lukewarm water (to help the sugar or honey easily dissolve)
  • 1 tablespoon lemon zest (zest of 1 lemon), finely zested

Instructions

  1. Whisk together ingredients: Whisk together all the ingredients in a large glass measuring cup until the honey or sugar is dissolved. Note: You could also mix in a bowl but the measuring cup makes it easy to pour into the popsicle molds.
  2. Fill popsicle molds: Pour mixture into popsicle molds.
  3. Freeze: Freeze for at least 4-6 hours or until solid (preferably overnight). Enjoy!

Notes

  • This is my favorite popsicle mold (the one shown in the photos). This recipe makes 6 popsicles using this mold but quantity will vary depending on the size of popsicle mold you use.
  • Lemon Zest: It is optional but adds incredible flavor so I highly recommend it! Make sure to finely zest it. I like to use a microplane zester grater.
