Ingredients

  • 3 medium bananas , peeled and sliced
  • ¼ cup creamy peanut butter
  • 1 cup dairy free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Slice the bananas into ¼-inch slices, keeping them as level as possible. Top one of the banana slices with a generous amount of peanut butter, and place another banana slice on top (like a sandwich). Place these on a tray and place in the freezer for 10 or 15 minutes.

  • Combine chocolate chips and coconut oil in a microwave-safe bowl and heat for 30 seconds. Let that sit for a minute and then stir. You may need to repeat this process until the chocolate is melted.

  • Place a piece of waxed paper on a tray that will fit in your freezer. Dip each banana "sandwich" the melted chocolate and then place them on the tray.

  • Once all the bananas are coated in chocolate, return the tray to the freezer for 10 to 15 minutes. Then transfer the bites to a freezer bag and store them in the freezer for up to 2 months.
