Creamy Mushroom and Cauliflower Risotto Recipe – How to make an easy Low Carb Keto Diet friendly cauliflower rice meal.

Cauliflower Risotto Recipe

This Cauliflower Risotto Recipe is SOOO good – it tastes like the real thing yet is Low Carb Ketogenic Diet friendly. It’s an excellent veggie friendly low carb dish to include in your weekly meals, that’s full of simple ingredients that are easy to find at a local grocery store.

The low carb risotto can be enjoyed as a side dish, along with your favorite main dish or as a whole keto meal, as you would a traditional risotto dish.

You could use your food processor to rice your head of cauliflower. As you’ll see in the video below, I prefer to use a box grater to create my cauliflower rice from the fresh cauliflower florets that I’ve used in place of white rice or arborio rice.

As you’ll notice in the recipe, I don’t give exact quantities as it depends on how many people you’ll be serving (and how hungry you’ll be!). Use the recipe as a guide to create your best low carb cauliflower risotto ever – with no rice!

Regarding the liquid, my preference is 50% Heavy Cream, Double Cream or Heavy Whipping Cream and 50% Almond Milk or Coconut Milk for the perfect creamy texture. In this instance is was 1/4 cup of each.

To make up your liquid for the creamy cauliflower risotto, you could also use chicken stock or chicken broth, vegetable stock, canned unsweetened coconut milk, water, cream cheese, mascarpone cheese, sour cream or even white wine if you include it in your diet, which is often included in a traditional risotto.

To make a cheesy mushroom cauliflower rice risotto, you can add in the suggested Parmesan cheese or choose to mix through mozzarella cheese, cheddar cheese, gorgonzola cheese or feta cheese. For a dairy free version, you can incorporate nutritional yeast for a similar cheesy flavor instead.

You can use chopped portobello mushrooms, white mushrooms such as button mushrooms or cup mushrooms, Shiitake mushrooms or porcini mushrooms for the unique earthy flavor or any mushroom varieties you like in the keto mushroom risotto.

The low-carb risotto is meat free, but you could easily add chicken, chopped salami or your meat of choice to create a meaty, creamy risotto.

For added extra flavor to the easy recipe for keto risotto, you could also sprinkle over fresh herbs, fresh parsley, fresh thyme sprigs, Italian seasoning, garlic powder, sun-dried tomatoes, lemon zest or squeeze over lemon juice.

Creamy Keto Cauliflower Mushroom Risotto Recipe

  • Cauliflower Florets
  • Garlic Cloves, sliced or minced
  • Sliced Fresh Mushrooms
  • 1/4 to 1/2 Cup Liquid (Mix of your choice from Almond Milk, Heavy Cream, Stock, Broth or Water)
  • Sea Salt & Black Pepper, to taste
  • Butter, Olive Oil or Coconut Oil, for frying
  • Parmesan Cheese for topping (optional)
  1. Rice the whole cauliflower either in a food processor or with a box grater.
  2. Heat a little oil or butter in a frying pan or large skillet over medium heat to high heat.
  3. When hot, add the sliced or minced garlic and chopped mushrooms.
  4. Saute until reduced and golden brown.
  5. Add the cauliflower and your liquid of choice, along with a pinch of salt, black pepper and any other seasoning you like.
  6. Simmer gently, stirring regularly until the cauliflower is cooked through.
  7. Remove to bowls, top with (optional) Parmesan cheese for cheesy flavor, and serve immediately, storing any leftovers in an airtight container to enjoy within a couple of days.
