The Easiest Cauliflower Pizza Crust

One thing that our family loves is pizza night. I couldn’t eat regular pizza crust if I planned to lower that A1C, so I had to find an alternative that wasn’t a terrible mushy mess pretending to be crust. So I set off in the kitchen to create a cauliflower pizza crust that would wow my taste buds and impress my family too!

The first thing I found out is that ricing your own cauliflower is pretty much an awful experience and very time consuming. I found Green Giants Riced Veggies in the frozen food section and grabbed those right up and boom, a long time consuming and awful experience avoided and already done for me! Cauliflower is a great substitution for starchy foods like pasta, breads and potatoes because it contains far fewer carbohydrates per serving. Less carbs, means less sugar, which in turn can lower blood sugar levels and is better for you overall…even if you are not a diabetic.

I created it and added some pretty awesome toppings as well! The Chicken bacon artichoke pizza recipe was so easy to make and although it took just a little more time than average, I am sure that I will be able to speed that process up in the kitchen as I get more comfortable with it.

First, you need to steam the riced cauliflower according to the directions on the bag and then while letting them cool, prep the other ingredients for the crust. You will need the riced cauliflower, eggs, oregano, basil, garlic and a mix of mozzarella and parmesan cheese (exact measurements are in the printable recipe below). Once your riced cauliflower is steamed, pour it onto a tea towel, wrap it up and twist it like you are wringing out a wet towel to remove any moisture from cooking. It doesn’t have to be perfectly dry, just get some of the moisture out. Then add the eggs, oregano, basil, garlic and cheese to the cauliflower in a mixing bowl and mix well.

Once the crust ingredients are mixed well, then pour them out onto parchment paper or a greased baking sheet and pat into your desired pizza shape. Make sure that the pizza is not too thin, but also not too thick so that you will have a crispy crust but it won’t be impossible to remove from the baking sheet. I found that about 1/4 to 1/8th thickness was a good range for us. Once shaped, bake on high for 10-12 minutes.

Adding the toppings is the best part to pizza! I do love the traditional meats and cheeses, but my husband is a huge fan of that papa murphy’s pizza and so that was my inspiration for this chicken bacon artichoke cauliflower pizza.

While the crust is baking, prepare your chicken bacon artichoke cauliflower pizza toppings and have some fun. I decided to do a ranch sauce with chicken, bacon and artichokes and the results were amazing!

I layered all the ingredients on my cauliflower pizza crust. I used pre-shredded and pre-cooked frozen chicken pieces, artichoke hearts and real bacon bits along with a mixture of mozzarella and parmesan cheese for an incredibly flavorful and low carb recipe. The sauce was just regular ranch dressing that I spread evenly on the crust as well.

I baked the Chicken bacon artichoke pizza at 400º for 12 minutes and it was fantastic. I did learn a little something though. If you use parchment paper, the cauliflower may get stuck to the paper and you will need to use a butter knife to loosen it. If you lightly spray the paper with non-stick spray or place the crust directly on a pizza stone this is less likely to happen.

Chicken Bacon Artichoke Cauliflower Pizza

This low carb, high protein chicken, bacon, artichoke cauliflower pizza will have you coming back for thirds and is so easy to make!

Ingredients

  • 1 bagGreen Giant riced veggies Riced Cauliflower
  • 2 Eggs
  • 1 tspOregano
  • 1/2 tspBasil
  • 1.5 CupMozzarella & Parmesan Mixed Cheese
  • 2clovesMinced Garlic
  • 1 CupPre-Cooked Shredded Chicken
  • 1/8cupbacon pieces
  • 6-8 pieces Artichoke Hearts
  • 1-2 TBSRanch Dressing

Instructions

  1. Using a tea towel, remove the moisture from the cooked cauliflower rice

  2. Mix the cauliflower, eggs, garlic, basil, oregano and 1/2 a cup of the cheese together to make the crust.

  3. Spread crust mixture onto your baking surface (may need to be lightly greased) and keep the thickness to 1/4-1/8/

  4. Bake at 400º for 10-12 minutes

  5. Add toppings (Spread our ranch dressing, add bacon, chicken, artichokes and 1 cup of cheese mixture)

  6. Bake at 400º for 10-12 minutes

  7. Remove, cut into pieces and enjoy!
